New York Crabcakes

Ingredients

for 6 persons

300 g crabmeat

250 g celeriac

150 g celery

250 g red peppers

50 g chives

100 g green onions

250 g breadcrumbs

30 g mustard

20 cl olive oil

Tabasco

10 cl oil

Cooking time : 5 min

Chop the vegetables very finely, like filaments.

Snip the chives and the onions.

Crumble the crab in a bowl. Blend in the vegetables, the herbs, the breadcrumbs, the mustard and the olive oil. Adjust the seasoning with Tabasco.

Form small meatbolls with your hands and cook them directly in a hot frying pan with olive oil, 2-3 minutes on each side so that they are well browned.

Serve with a crisp salad and a seafood vinaigrette.
