The "Grand-Mother" waffle

Ingredients

for 6 persons

5 egg yolks

40 g sugar

400 g flour

37,5 cl milk

310 g melted butter

3 egg whites

1 pinch of salt

Preparation : 1h15
Cooking time : 5 min

In a bowl, blanch the egg yolks with the sugar, than, still beating, add the flour.

Pour the milk cold, then the melted butter.

Whip up the eggs whites with the salt and add them to the dough.

Keep it refrigerated for 1 hour et warm up the waffle iron.

I you don't have any waffle iron, come and taste them at L'Absinthe, they are served with whipped cream, chocolate sauce and home-made jam...
